This is a pimped up version of our classic Victoria “Open” Sandwich for those who want something big, bright and berry-ed up!
It’s our salted butter & almond cake base (similar to a classic butter cake) soaked in a touch of lychee syrup, then topped with rose mascarpone, lychees and lots and lots of mixed berries (normally strawberries, raspberries, blackberries, blueberries and we’ll add cherries when they’re in season). Nothing fancy — just a single-tiered cake + creamy frosting + wayyy too much fruit!!!
